I personally use the Celtic UI. The pet window may be a little big but I don't really notice as I close it shortly after summoning. I like it because my Hp, pet HP, mana, what ever that yellow bar is, XP, and AA XP, are all in the player window. I also like that my group window is closable as I don't usually need to keep track of the tank's HP.

I am a big Fan of Delta
I looked for my Magi UI for ages and Delta was the one that suited me best. The pet window is a bit small on 2.2 but the lay out for Delta 3 and there are a number of customised versions is perfect for me

At the end of the day its all down to personal choice
My cleric UI is proving some what harder to decide on

I really like Tablets as a mage.

It lest me get everything close for mouse use and gives a nice clean feel.

With a little different setup it seems to be a good healer interface also.
