Assuming you're using php, might try stripslashes() on all your field values before displaying them.

And on the off chance you're not escaping the fields you accept, addslashes() and possibly htmlentities() would be good to take a look at.

Or if this is some out of the box solution, talk to the developer. Use strong language ;)
