rather than having the windows set as chat window 1 etc, is it possible to have them labelled? as in Guildchat, ranger chat etc?

VI should have included a command to rename and/or turn off the window titles, but they didn't. If you want a window's title to have specific text in it, you have to edit the XML file associated with that window.

So, to answer your question, no, you can't have multiple chat windows with different names, at least not by any means I know of.
